One of the oldest Champagnes from the Côte des Blancs, Delamotte is based in Le Mesnil-sur-Oger, adjacent to its sister house Champagne Salon. A superlative expression of Grand Cru Chardonnay Champagne, Champagne Delamotte Blanc de Blancs is made by the winemaking team of Salon from vineyards, all situated in the villages of Le Mesnil, Oger, Avize and Cramant. Fermentation in stainless steel and a very restrained dosage are used to produce an untouched, mineral style of Champagne. The austerity of Chardonnay grown on chalky soil is tempered during the four to five years of aging on the lees before disgorgement and a further few years of cellaring before release. Foremost a mineral wine, Delamotte Blanc de Blancs NV has textbook chalkiness; with time in the glass showing its complexity from the lees and white flesh fruit. On its own, with fresh oysters, elegant saltwater fish or simply with fresh radishes with a touch of fleur de sel, Delamotte Blanc de Blancs is a versatile wine as an aperitif or at the table.
