Part of an ancient tradition and made in a process known as "Methode Ancestrale," these wines are often referred to as Pétillant Naturel or Pét-Nat's. At Channing Daughters, we hand-harvest the grapes, whole cluster-press them and settle the juice. We start wild fermentations in small stainless-steel tanks then coarsely filter and bottle the wine with no sulfur dioxide or stabilization. Embrace the slightly cloudy nature when pouring out the end of the bottle. Our Bianco is straw colored with inviting aromas of white flowers, tree fruit, yeasty bread, minerals, and salty air. A hint of sweetness balances the refreshing acidity and keeps you coming back for more sips of this super satisfying white sparkling wine. (from the vintner)
