Customize This Quicker Stovetop Chili

We love this chili recipe because it's super versatile and goes well with just about any toppings. Dress it up with the classic sour cream and cheddar, or get creative with bacon bits, potato tots, or even cheesy crackers: Drain and reserve the liquid from 1 can chipotle peppers. Finely dice one pepper and reserve. Heat 1 tbsp olive oil in a large pot over medium. Add 3 cloves minced garlic, 1 diced onion, and 1 diced bell pepper. Cook until onion is translucent. Add 1 lb ground beef, breaking it up into pieces, and season with salt and pepper. Cook 1 minute, tossing every now and then. Stir in diced chipotle and reserved sauce and cook another minute. Stir in 1 can each drained and rinsed black beans and red beans, along with 1 can diced tomatoes. Increase heat to high and bring to a boil. Reduce heat slightly and let simmer 15-20 minutes. Serve with any toppings that you like.

Make This Salmon with West African Flavors

Egunsi Food's Ata Din Din is a West African sauce made from caramelized veggies. Its deeply savory flavor adds wonderful complexity to this simple meal with salmon, rice, and veggies in this easy recipe: Rinse 1/2 c rice, then cook with 1 c water and 1/4 tsp salt. Meanwhile, heat a little bit of oil in a pan over medium heat. Season 1 salmon fillet with salt and pepper. Add to pan and cook, skin side down, until crisp, 6-9 minutes, then flip and cook on other side until done, about 2 minutes more. Remove from pan and set aside. Melt 1 tbsp butter in pan over medium-high heat. Add 1 clove minced garlic and 6-10 broccoli florets. Cook, tossing, for a minute or two. Add 1/2 c water and 1/4 tsp salt, then let steam to desired tenderness, 5-10 minutes. Fluff rice with a fork, then arrange on a plate with broccoli and salmon. Drizzle over 2-3 tbsp Ata Din Din sauce.

How To: Asian Salad with Chicken and Satsumas

Another way to use our favorite golden nuggets--this simple, colorful Asian-inspired salad (use rotisserie chicken and save even more time). For the salad, toss together 1 cup satsuma segments, 1 head of chopped cabbage, 1/3 cup of sliced green onions, 1 sliced red bell pepper, 2 shredded carrots and handful of chopped cilantro. Shred 2 cups cooked chicken. For dressing, whisk together juice from 2 satsumas and 1 lime; 2 tbsp soy sauce and white wine vinegar; 1 tbsp olive oil; 1/4 cup creamy peanut butter; 4 minced garlic cloves; 2 tbsp honey; 1/2 tsp crushed red pepper flakes; 1 tsp sriracha and 1/4 cup water. Toss chicken with 1/3 of the salad dressing, pour remainder on top of the veg mixture. Top salad with chicken, 1/2 cup chopped cashews, chopped cilantro and 2 tbsp black sesame seeds. Serve chilled.

Easy Sheet Pan Chili Maple Salmon with Veggies

Get on board the sheet pan cooking bandwagon with this no-fuss recipe that's chock full of veggies, omega-3-rich salmon and a delicious chili maple glaze. Preheat the oven to 400 degrees F. Cut squash into ½ inch semi-circles or cubes. Halve any large Brussels sprouts. In a large bowl, whisk together oil, maple syrup and chili garlic sauce. Add the veggies and toss to coat, then spread out on a baking sheet, reserving extra sauce in bowl. Toss salmon fillets in remaining sauce and lay them on the sheet skin-side down. Season with salt and pepper. Roast everything in oven until salmon is cooked through, approximately 10 minutes. Serve immediately.
