Chuck short rib is a lesser-known boneless cut with a beefy taste and great marbling. Think of it as a more budget-friendly cross between a meaty hanger and a tender strip steak. Our expert butchers cut it from the chuck (shoulder) so that it's ready to cook on the grill or in a pan. When cut across the grain, it makes an excellent steak. You can also slice it thinly for tossing into stir fries.
