Tender and richly flavored, riblets are an all-American cut, the lamb version of baby backs. They make a super appetizer or finger food to pass around at parties. Season them all you want, even try a little maple syrup at the end of your barbecue. For delectable riblets, boil in salted water for about 30 minutes before grilling or barbecuing.
