Australian Netted Boneless Leg of Lamb
A boneless leg of lamb is the perfect main dish for a holiday table. This roast is netted, which helps it keep its shape through the whole cooking process. We recommend seasoning this cut simply with salt, pepper, garlic, and a little rosemary, then letting the lamb sit, seasoned, for at least 20 minutes. While it's resting, preheat the oven to 450 F. Once the oven is ready, place the roast inside, and then immediately reduce the temperature to 325 F. We recommend cooking it for about 20 minutes per pound.
