Rubbed with an authentic seasoning, these ribs are the best way to bring the flavors of your favorite barbecue joint to your kitchen. Back ribs are leaner and a bit more tender than St Louis-style ribs, so they can stand up to faster cooking in the oven or on the grill. However, to get the meat to fall off the bone, we recommend cooking them low and slow: try covering the ribs with foil and cooking at 230 degrees F in your oven or in a smoker until the internal temperature reaches 190 degrees F, about 3 hours.
