Rubbed with a fragrant garlic and herb seasoning, these ribs are the ultimate summer cookout item. Back ribs are leaner and a bit more tender than St Louis-style ribs, so they can stand up to faster cooking in the oven or on the grill. However, to get the meat to fall off the bone, we recommend cooking them low and slow: try covering the ribs with foil and cooking at 230 degrees F degrees in your oven or in a smoker until the internal temperature reaches 190 degrees F, about 3 hours.
