    Cellars at Jasper Hill's master cheesemaker, Mateo Kehler, provides his expertise and his cheese cave for 60 quarterly wheels of this special-selected cave-matured 12-month-old clothbound cheddar. Kehler's climate-controlled caves and years of knowledge transform Cabot's cows' milk wheels into a things of beauty, full of sharp caramel notes.

    Please note: Due to the aging process in cloth binding, there may be some discoloration to the outside edges of your cheese. This in no way damages the quality or flavor of the cheese.
