    Cabriolait is a Belgian abbey-style goat's milk cheese. It's inspired by a traditional cow-milk cheese called Pas de Rouge, but made instead with milk from Saanen goats that are crossbred with an Alpine breed. Because goat's milk has smaller fat and protein cells than cow's milk, Cabriolait takes on a slightly drier texture. But it still retains complex hazelnut aromas thanks to the presence of B. Linens bacteria. Aged three months, this cheese has toasted bread and butter flavors and lacks the sour aftertaste often found in goat's milk cheeses.
