Wild sockeye salmon from the pristine waters of Southeastern Alaska are caught by local fisherman. After a special dry-curing process is completed, sides of salmon are cold-smoked with a unique blend of native American hardwoods. The salmon are trimmed by hand, packed, chilled, and delivered to their markets after leaving the smokehouse.
