It comes from our friend Manfredi Barbera, a fourth-generation Sicilian producer with a deep respect for tradition.
For this oil, he uses three olive varieties, Biancolilla, Nocellara, and Cerasuola, that are harvested by hand. They're milled on ancient granite grinders within 24 hours of picking to preserve the fresh flavors. Barbera's olives and methods are so unique to Sicily that this oil even has IGP certification—the Italian marker for quality products that are characteristic of a specific region.
