FreshDirectRoasted Lemon Herb Chicken with Warm Vegetable & Spinach Salad

Our marinated lemon chicken, raised without antibiotics, is roasted with fresh vegetables and tossed with spinach to make a warm salad that is sure to delight. Plus, it all comes together in one pan, which means more time eating and less time doing dishes.

Equipment You'll Need:
- Cutting board
- Vegetable peeler
- Baking sheet
- Large mixing bowl
From Your Pantry:
- Black pepper
- Extra virgin olive oil
- White Burgundy
- 1 Fennel Bulb
- 1 Red Onion
- 1 Carrot
- 7 oz. Baby Potatoes
- 1 Lemon & Herb Marinated Spatchcock Chicken
- 4 oz. Spinach
Preheat oven to 450 °F. Wash and dry the fresh produce. Remove any dry outer layers of the fennel bulb and cut in half, cut the red onion in half, peel off the outer skin, and peel the carrot. Cut the fennel, red onion, and carrot into 1-inch pieces. If any potatoes are larger than 1 inch, cut in half. Leave the smaller potatoes whole. Place all cut vegetables into a large mixing bowl. 2. Get Your Chicken Ready to Bake
Remove the chicken from the bag and discard bag. Lay the chicken on a baking sheet, skin side up, and press down to flatten on the tray. Chef’s Tip: A whole chicken that is split down the back is called a spatchcock chicken. This allows the chicken to lay flat and cook evenly. 3. Season Your Vegetables and Roast
In the mixing bowl with the cut vegetables, add 2 tablespoons of olive oil, and season with salt and pepper. Mix well so everything is evenly coated, and arrange the vegetables on the baking sheet around the chicken. Place tray in oven and set your timer for 35 minutes. Finally, in the same mixing bowl you had your vegetables in, add the bag of spinach. 4. Remove Chicken and Let Rest
When your timer goes off, check your chicken to make sure it is cooked through. If not, allow to cook another 5–10 minutes and check again. Once cooked, take baking sheet out of oven and carefully remove the chicken to a cutting board or plate to rest. Chef’s Tip: Allow your chicken to rest for 10 minutes. By letting it rest, the moisture gets locked in and your chicken will be tender and juicy. 5. Make The Warm Salad
While the chicken is resting, carefully add all of the hot, roasted vegetables and the juices to the bowl with the spinach. Toss to coat and season with salt and pepper to taste. 6. Carve the Chicken
Start by cutting the chicken in half. Then separate the half into the white and dark meat quarters by holding the breast down to the cutting board with one hand and gently pulling the drumstick out and away from the center of the chicken. Cut each quarter into smaller pieces by splitting the breast into 2 pieces and separating the leg and thigh. Repeat with the remaining half chicken. Serve chicken with warm salad and enjoy!

Standard PackagingA Styrofoam tray that is sealed in plastic — rigid enough to stack in the fridge, and free of charge. Meat in standard packaging is best when eaten within 3 days (stored at a refrigerator temperature of 38 degrees). For optimal freezing we recommend vacuum packaging.
Vacuum PackagingThis sturdy, airtight plastic pouch will protect and prolong the life of your order. It is perfect for freezing. With the seal intact, vacuum-packed meat will keep for up to 9 months in your freezer. For your convenience, each roast is individually vacuum packed; when meat is sold as a chop, steak or by the pound, your meat will be vacuum-packed based on minimum quantity. For example, if the minimum quantity of chops is two, your chops will arrive in vacuum-packs of two.
NOTE: Always check the "use or freeze by" date on your product label.
