Cucumber and Seaweed Salad

    Kelp is on the way with this refreshing Japanese-inspired salad. An excellent source of iodine and a good source of iron and calcium, kelp, or "kombu" as the Japanese refer to it, has an ocean taste and crunchy texture. Our marinade of rice wine vinegar, soy sauce, and a pinch of sugar (think sonomono), generates a "quick pickle" effect with the sliced Persian cucumbers. For the most traditional take on this salad, add poached shrimp or octopus.
