    A firm cow's milk cheese from northern Lombardy, Italy. Aged for about six months in caves in the Valtellina Valley, Casera Valtellina has dense texture and a bold, nutty taste with earthy highlights and a slightly sweet finish. Wonderful baked into a gratin or shredded over roasted vegetables.
