    Ubriaco means "drunken," and derives its name from the practice of curing young cheeses in wine and covering the rind with Cabernet, Merlot and Reboso grapes. Matured for 6-10 months, the rind turns a deep violet with an impression of grape leaves. We love its unusual, raw cows' milk character highlighted by heady aroma and sweet flavor with a fruity, tart finish.
