    Raised on lush, grassy pastures on St. Croix Farm in Valley Falls, New York, our whole rabbits mature in a natural environment rich in sunshine and fresh air. During the winter months, the rabbits live in spacious indoor pens where they're fed an abundance of leafy green hay. The meat is tender and white with a mild taste—not dissimilar to chicken. Braise it, bake it, or try frying it. We love to use it in stews and casseroles, too.
