Preheat oven to 425℉. Remove chicken from packaging and splay out on top of a wire rack in a roasting pan. (Optional: layer pan with cut vegetables drizzled with olive oil, salt, and pepper instead of using wire rack). Roast skin side up for 45-50 minutes, or until internal temperature reaches 165℉.
