These easy-to-prepare medallions can be grilled in just two to three minutes per side;
if you prefer a more leisurely pace, sautée them for just over three minutes per side.
Simply serve with sprinkle of salt and pepper, a fresh rosemary herb rub, a fruit glaze,
or — for a special treat — season with a smoked Andalusia paprika dry rub.
Also excellent braised with apples or used to replace veal in a scaloppini dish.
