  • A cultivated form of the wild blewitt mushroom, the bluefoot has flesh that's more dense than its country cousin. These 'shrooms are cultivated in France, and the flavor is mild and clean with a low water content. You often find bluefoots cooked with other, softer mushrooms to add texture variety. Though they're firm enough to roast or braise, we just love Bluefoots sautéed in butter.
