Bred in the pristine waters of the Marlborough Sounds in New Zealand, the Ora King salmon is a rare luxury, making up less than one percent of the world's salmon population. Long revered by fisherman and chefs as the best part of the fish, the collar is cut from the area right below the head. It has an exceptionally sweet and rich taste with a lusciously moist texture. The collar is so flavorful that we like to prepare it simply with a sprinkling of salt and pepper before broiling it. Finish with a dash of soy and a squeeze of citrus.
The New Zealand King Salmon Company raises their Ora King Salmon from hatchery to harvest. The salmon start their journey in the spring waters of Te Waikoropupu Springs, New Zealand and live their adult lives in the pristine and fast-flowing sea waters of the Marlborough Sounds.
