    Spiny Sea Urchins are found along the coast of Cape Cod through the Canadian Maritimes. They yield creamy “Uni” — the corral, or roe, of the urchin. Removed from their shell, the bright yellow-to-orange lobes are perfect when used for sushi, in omelettes, sauced over pasta or noodles, or pureed with butter to finish seafood sauces. East Coast uni is harvested in the fall and winter months, at their peak for flavor.
