Tai Snapper is actually not a snapper at all. Though it resembles the American Red Snapper, it's in the bream family. The Japanese consider it to be one of the best-tasting fish in the sea and call it Tai, which means "good fortune," so it's typically served in celebratory feasts. The firm yet flaky flesh of the Tai Snapper has a mild flavor that excels in both raw and cooked preparations.
