Served cooked or raw, fluke has a sweet, delicate flavor. Fluke is ideal for raw preparations such as sashimi, ceviche, or crudo. When cooked, the white, flaky meat holds up well to many types of preparations, including frying, steaming, grilling, and sautéing. Fluke, also known as summer flounder, is locally caught from New Jersey to Cape Cod.
