Traditionally made in Mexico, our authentic version of this classic involves painstaking steps including toasting, grinding and simmering the traditional trilogy of chilies (ancho, pasilla, mulato), real Mexican chocolate and cinnamon, nutty sesame seeds, and sweet dried prunes into a smooth, rich sauce, which we then smother atop corn tortillas filled with shredded chicken thighs (raised without antibiotics) and Monterey jack cheese. Lucky you — we do all that work so you can serve up this delicious, impressive dish without a whole day's worth of fuss and labor. Feel free to brag about your handiwork — we won't tell.
1. Remove cardboard outer sleeve, leaving plastic film intact.
2. Microwave on HIGH for 3 minutes (1000+ watts) or 3 ½ minutes (lower watts).
3. Let stand for 1 minute before removing film. Enjoy!
