Filled with vivid color and a mixture of textures, this earthy vegetarian curry features roasted chana (chickpeas), nutty cauliflower, meaty cremini mushrooms, roasted tomatoes, bright sweet potatoes and green peas. Long-simmered with ginger, fenugreek and an array of home-ground spices, this rich curry is finished with creamy cashew butter and organic coconut milk. We recommend serving with our Basmati Rice and Toasted Vermicelli Pilaf.
1. Remove cardboard outer sleeve, leaving plastic film intact.
2. Microwave on HIGH for 3 ½ minutes (1000+ watts) or 4 minutes (lower watts).
3. Before removing film, gently shake container and let stand for 1 minute. Enjoy!
