You can use the entire vegetable, from stem to bulb. Enjoy the bulbs' distinct flavor in fresh preparations and use the stalks as you would leeks — we prefer roasting, grilling or braising.
Fresh garlic will continue to dry, simply cut off the stalks hang them in a cool dry place. They have great shelf life.
