    From the outside, an Okinawa sweet potato looks like a pointy-eared russet potato: tan and a little bit tapered at the ends. Once you've cut it open, it looks anything but standard. Okinawas are enjoyable in all the ways sweet potatoes normally are — baked, boiled, mashed, in pies — but their vibrant purple interior lends itself especially well to slicing into thick slabs and roasting.
