    This is an herb with history — it's been used for its medicinal properties, cooked into both savory and sweet dishes, and added to beer for flavor. (Did we mention it can be dried and used as an insect repellent?) A staple ingredient in Asian food, where it's dried, powdered, and added to rice cakes, the young leaves have a flavor reminiscent of white mushrooms and take on a more herbal green tea flavor as they mature. We handpick the leaves while tender from a preserved meadow — we love them added to a mushroom soup or flash-fried and cooked tempura.
