Fresh garlic bulbs are only available for a few weeks every spring. They're harvested young with their tall, bright green stalks still attached and have a sweet, slightly spicy flavor. You can use the entire vegetable, from stem to bulb. Enjoy the bulbs' distinct flavor in fresh preparations and use the stalks as you would leeks — we prefer roasting, grilling, or braising.Fresh garlic will continue to dry, simply cut off the stalks hang them in a cool dry place. They have great shelf life.
