The oyster mushroom is a bit more delicate than the shiitake mushroom with a milder taste. It smells like watermelon rind and has a mild seafood taste. Our oyster mushrooms are grey in color and slightly meatier than those of other industries. The color and thickness of the mushroom depends on the temperature that it is grown at.
