Resembling a cross between a pumpkin and a squash, calabazas have a sweet flavor reminiscent of butternut squash and a smoothly textured pulp. They can be substituted in any recipes calling for squash and their seeds can be roasted just like a pumpkin's and enjoyed as a snack. Simply place on a baking sheet, drizzle with oil, and cook until crispy and brown. Add a squeeze of lime for extra kick.
