The sweet taste of an artichoke captures the essence of a garden and long-stem artichokes deliver even more of the green, woodsy flavor. The stem is actually an extension of the tender, flavor-packed heart. Simply trim the end (about 1/4 inch) and peel the stem until you reach the green flesh. Long-stem artichokes are wonderful grilled or broiled and make an elegant presentation. Dress cooked long-stem artichokes with lemon-infused olive oil and fat curls of Parmigiano-Reggiano.
