The Centercut squash is a new variety developed by Row 7, a groundbreaking seed company born from collaboration between plant-breeders and chefs. Row 7's Michael Mazourek set out to take the Italian tromboncino, a squash best known for its decorative uses, and elevate it into something flavorful and complex. The result is reminiscent of a zucchini, but nuttier and meatier with a less watery texture. Grown by our local partners at Lancaster Farms.
