Henri Darnat says that making great wines requires patience and "the courage to wait"; waiting for optimum ripeness for the time of the harvest, waiting on the wines as they ferment with their own natural rhythm barrel by barrel, waiting and tasting the wines so they are bottled at their optimum point of purity and liveliness. The pride of his work is that his wines are represented on the best restaurant lists of France and the world.
This is 100% Pinot Noir from Darnat's estate holdings. In keeping with their ancestors' philosophy, the Darnat vineyards are worked by hand, without chemicals or herbicides. The soil structure is a combination of both clay and rocky limestone, providing the wine great elegance and minerality. The wine has a brilliant ruby color and expressive nose of spices and red berries, this wine is fresh and has perfumed nuances with flavors of red currant, raspberry, and a touch of clove. Excellent with lamb, chicken in wine or red sauce, and a variety of hard cheeses and charcuterie. (from the vintner)
