The Lallier family has been in Aÿ for five generations, with land predominately in the prestigious Grand Cru sites of Aÿ and the Côte des Blancs. The new Lallier Series R, uses exclusively Pinot Noir and Chardonnay to embrace and celebrate the unique characteristics of a particular harvest. Each Champagne is coded and easy to decipher: the first letter 'R' is for Récolte (harvest), 'O' for Origine ([year of] origin), followed by a two-digit number denoting the vintage. R.O12 means that this new Champagne is predominantly (over 80%) from the 2012 vintage.
Clear and elegant, with very delicate and precise sweet cherry, ripe apple, melon and lovely chalk flavors on the aromatic nose, this Brut is round, intense and fruity-elegant on the palate. It is perfectly dry and well-structured by minerals and a perfectly integrated acidity.
R.012 is a great gastronomic Champagne that pairs perfectly with savory and sweet dishes. Try it with snails in sweet parsley butter. squid seared "à la plancha", or with fine, hard and semi-hard cheeses like Appenzell or Comté. When it comes to dessert, tarte Tatin and pear cheesecake are perfect matches.
