Chichibu, Japan's quintessential craft whisky distillery, was started in 2008 by Ichiro Akuta. His family has been making Sake and Shochu in the Saitama prefecture since 1625. Ichiro's first foray into whisky involved saving the inventory when the Hanyu distillery shuttered in 2000; he found tremendous success releasing these stocks as the Playing Card series and parlayed the proceeds into a small distillery of his own.
Ichiro balances the tradition and heart of the Scottish whisky making with the precision of the Japanese shokunin philosophy. Ichiro's Malt and Grain is an all-world whisky made from a blend of Ichiro's own malt with 3 to 5-year old Scottish, Irish, Canadian, and American whiskies. The blend is then aged in Chichibu an additional one to three years. Packed with lemon zest aromas and flavors of stone fruits, toffee, cream, and ginger, this is an extraordinary whisky.
