|Preheat oven to 350 degrees. Remove lid from container. Season fish with salt and pepper. Pour one tablespoon of water or wine in bottom of tray. Cover container with aluminum foil and place in oven. Bake until fish is flaky and center is 145 degrees, about 25 - 30 minutes.
