    CHICKEN MARSALA

    Fortified wine, such as Marsala, has a higher-than-normal alcohol content, thanks to the addition of brandy or another liquor. Most — but not all — of the alcohol burns off during cooking, leaving the flavor behind.

    INGREDIENTS (CLICK TO BUY)

    16 fresh sage leaves
    8 slices prosciutto
    8 chicken cutlets
    2 tablespoons all-purpose flour
    1 1/2 teaspoons black pepper
    1 tablespoon olive oil
    3 tablespoons unsalted butter
    3/4 cup Marsala
    2 tablespoons capers in brine, drained and coarsely chopped
    2 tablespoons finely chopped fresh flat-leaf parsley leaves

    PREPARATION

    Heat oven to 350° F. Place the prosciutto on a work surface. Arrange 2 sage leaves in the center of each piece of prosciutto and top with a cutlet. Wrap the prosciutto around the cutlet. Place the flour on a plate and season with the pepper. Dredge the prepared cutlets in the flour. Heat the oil and 1 tablespoon of the butter in a large skillet over medium-high heat until the butter melts. Add 4 of the cutlets, seam-side down, and cook until golden brown, about 3 minutes per side. Transfer to a baking dish. Repeat with 1 more tablespoon of butter and the remaining cutlets. Transfer the baking dish to the oven until the chicken is cooked through, about 8 minutes. Meanwhile, return the skillet to medium-low heat. Add the Marsala and cook, stirring to scrape up any browned bits, for 3 minutes. Add the capers and parsley. Stir in the remaining butter, remove from heat, and tilt until it melts. Place two cutlets on each plate and spoon the pan sauce over the top.
