    SWEET PEA RISOTTO

    Keep a few bags of frozen peas around at all times. Not only do the peas retain a surprisingly fresh, springlike flavor when frozen but the bags make great impromptu ice packs.

    Total time: 50 minutes

    Makes 4 servings
    INGREDIENTS (CLICK TO BUY)

    1 tablespoon unsalted butter
    1 tablespoon olive oil
    1/2 small yellow onion, finely chopped
    2 cups Arborio rice
    1 cup dry white wine, such as Sauvignon Blanc
    4 cups low-sodium chicken broth
    1 teaspoon kosher salt
    1/4 teaspoon black pepper
    1 cup (4 ounces) grated Parmesan
    2 1/2 cups frozen peas, thawed
    Fresh mint sprigs (optional)

    PREPARATION

    Heat the butter and oil in a medium saucepan over medium heat until the butter melts. Add the onion and cook until softened, 3 to 5 minutes. Add the rice and cook, stirring constantly, until it begins to turn translucent, about 2 minutes. Add the wine and cook, stirring frequently, until all the liquid is absorbed, 3 to 5 minutes. Add the broth, 1/2 cup at a time, stirring occasionally and waiting until it is absorbed before adding more. It should take about 30 minutes for all the broth to be absorbed. Remove from heat and add the salt, pepper and Parmesan. Stir to combine. Puree 2 cups of the peas in a blender or food processor. Just before serving, stir in the pea puree and the remaining whole peas. Divide among individual bowls. Garnish with the mint sprigs (if using).
