    TABBOULEH

    Tabbouleh, the famous bulgur salad of the Middle East, used variously as an appetizer, a topping for a pita sandwich, or as a dinner salad, has taken this country by storm. Now found in almost every deli section of supermarkets and gourmet food shops, this refreshing combination of bulgur, parsley, scallions, tomatoes, olive oil, and lemon juice is also simple to make at home. What follows is a classic recipe for you to use as a general guideline, but vary it to suit your personal taste! Many people like to add crushed garlic for added zest.

    Makes 6 to 8 servings
    INGREDIENTS (CLICK TO BUY)

    1 cup fine-to medium-grade bulgur
    3 medium tomatoes, chopped
    4 scallions, chopped
    3 cups finely chopped fresh parsley
    1/2 cup finely chopped fresh mint
    1/2 cup olive oil
    1/4 to 1/3 cup fresh lemon juice, to taste
    Salt and freshly ground black pepper, to taste
    Romaine lettuce leaves
    Whole-wheat pitas, cut into halves

    PREPARATION

    1. Rinse the bulgur and place it in a medium bowl. Cover with cool water and let soak until it is tender to the bite, 20 to 30 minutes. Drain thoroughly and squeeze out any excess water. Fluff to separate the grains.
    2. Combine the tomatoes, scallions, parsley, and mint in a large salad bowl. Add the bulgur and toss gently.
    3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
    4. Pour the dressing over the bulgur mixture and toss gently to coat. Taste to correct seasonings. Refrigerate, covered, to chill.
    5. Line a salad bowl with lettuce leaves and arrange the tabbouleh on top. Offer whole-wheat pita halves on the side.
