This is as simple as can be—just a quick summertime ziti that takes advantage of high-summer tomatoes and basil pesto but adds a little soybean protein to make a satisfying, quick dinner.

Serves 4
 Passionate Vegetarian

1 pound ziti
1 can (15 ounces) soybeans*
3 red-ripe summer tomatoes, stems removed, chopped
1 1/2 to 2 1/2 tablespoons good pesto, homemade or commercial
Salt and freshly ground black pepper to taste
A little olive oil, pressed garlic, additional pesto (optional)

* FreshDirect Note: We substitute frozen, shelled soybeans (edamame) for the canned version in this recipe.

1.Cook the ziti in boiling water according to the package directions.
2.As the ziti cooks, run the can of soybeans under hot water to liquefy the jelled bean-cooking liquid. Drain the soybeans well, reserving the broth for use in stock, if desired. Place the well-drained soybeans in a large bowl. Add the tomatoes and pesto, tossing well to combine.
3.When the ziti is ready, drain well and immediately toss with the soybean mixture. Add salt and loads of pepper. If you like, add a bit of oil and some fresh-pressed garlic (these may or may not be necessary; it depends on your taste and the composition of your pesto). Or you might want a little more pesto. Toss again, and serve immediately.
