    MILD-MANNERED DEVILED EGGS
    from "FreshDirect Recipes"

    Sweet and mildly spiced, these deviled eggs become inspiring palates for young cooks when combined with a few flavorful sprinkles. And if you don't mind colored egg whites, you can even use this recipe as a delicious way to use up excess Easter eggs.

    INGREDIENTS (CLICK TO BUY)

    12 hard-boiled eggs, cooled and peeled
    1/3 cup reduced-fat mayonnaise
    2 tsp. Dijon mustard
    2 tsp. cider or malt vinegar
    1 tsp. mild mango chutney (optional)
    5oz (about 3 cups) mild greens (optional, for plating)

    Your choice of toppings: sweet paprika, smoked Spanish paprika, mild curry powder, chopped herbs (dill, tarragon, chives or basil), thin-sliced radishes, halved cherry tomatoes, diced red peppers, sliced Spanish olives or black olives, chopped smoked salmon, chopped dill pickles.

    PREPARATION

    1. Cut the eggs in half lengthwise. Gently scoop out the yolks, placing them in a medium-size mixing bowl.
    2. Blend the mayonnaise, Dijon mustard, vinegar and mango chutney into the yolks. Taste the mixture, and adjust to your taste by blending in a little more vinegar or chutney, if desired.
    3. Spoon the yolk mixture into zip-top plastic bag. Use scissors to clip a small opening in one of the bottom corners of the bag. Carefully pipe the yolk filling into the egg cups.
    4. If desired, sprinkle on toppings, and nest the finished egg halves on a platter sprinkled with the baby greens.
