1/4 cup tahini (sesame paste)
1 teaspoon cumin or more to taste
1/2 teaspoon salt
2 large cloves garlic, finely chopped
3 tablespoons lemon juice
3 tablespoons hot water
1 19-ounce can garbanzo beans, drained
Chopped fresh parsley

Combine tahini, cumin, salt, and garlic in
a small bowl. While mixing, slowly pour
in lemon juice, then hot water. Purée garbanzo
beans in a blender or a food
processor, or pass through a food mill.
Add tahini mixture to purée and process
or mix well. Season to taste. Sprinkle with
chopped parsley and serve with fresh
vegetables or toasted pita bread. Makes
1 1/2 cups. |
