BRUSCHETTA WITH SMASHED PEAS & MINT

To make this recipe in advance, cover and refrigerate the pea mixture for up to 12 hours. Bring to room temperature for 1 hour. Broil the baguette and assemble the bruschetta just before serving.

1 10-ounce package frozen peas, thawed
1 tablespoon finely chopped fresh mint
2 tablespoons extra-virgin olive oil
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 baguette, thinly sliced

PREPARATION

In a food processor, pulse the peas until roughly chopped. Stir in the mint, oil, salt, and pepper. Heat broiler. Place the baguette rounds on a baking sheet and broil until lightly browned, about 1 1/2 minutes per side. Spread the topping on the toasted baguette.
