
LEMON, ALMOND, AND GREEN OLIVE RELISH

 You can use raw, roasted, or smoked almonds in this relish.

1 lemon, unpeeled
1/3 cup (2 ounces) chopped almonds
1 1/2 cups green olives, pitted and sliced
3 tablespoons extra-virgin olive oil
1/4 teaspoon kosher salt
1/8 teaspoon black pepper

Thinly slice the lemon. Remove and discard the seeds. Finely chop the slices. In a bowl, combine the lemon, almonds,
olives, oil, salt, and pepper. Serve with chicken or pork.
