If you'd rather not have peas skittering all over (and off) your kids' plates, parlay this side dish into a puree that stays put. Just grab a potato masher or the back of a wooden spoon and smash the peas right in the skillet.

    Hands-on time: 10 minutes
    Total time: 20 minutes

    Makes 4 servings

    1 10-ounce package frozen peas
    1 tablespoon unsalted butter
    1/2 teaspoon kosher salt
    1/8 teaspoon black pepper
    1 teaspoon fresh lemon juice
2 tablespoons chopped fresh mint leaves

Bring a large pot of salted water to a boil. Add the peas and cook until tender, 3 to 5 minutes. Drain. Heat the butter in a large skillet over medium heat. Add the peas, salt, pepper, and lemon juice. Cook until warmed through, about 2 minutes. Remove from heat. Add the mint and toss.
