One of the classic bistro toppings for grilled steak, this butter—also known as maitre d'hotel butter—is also a naturally for fish and poultry.

Makes About 1/2 Cup


8 tablespoons (1 stick) unsalted butter, slightly softened at room temperature
1 tablespoon minced garlic
1 tablespoon finely sliced flat-leaf parsley
1 tablespoon finely sliced chives
1/2 teaspoon finely sliced tarragon
1/2 tablespoon freshly squeezed lemon juice
1/4 teaspoon kosher salt, plus more if necessary

Put all ingredients in a bowl and combine well with a wooden spoon or rubber spatula, making sure all ingredients are well incorporated.
Wrap the butter and refrigerate for at least 2 hours, or up to 1 week, or freeze for up to 3 months.
