    I'll be honest with you: I have no idea if they make lamb chops like these anywhere in Asia. However, lamb has such complex flavors and silky texture that it is a perfect carrier of contrasting strong tastes. So the garlic, ginger, sesame oil, and chiles that work so well with other assertive Asian ingredients couldn't miss with a tender grilled lamb chop.

    Serves 6

    3 small fresh red serrano chiles, finely minced
    3 tablespoons minced garlic
    1 piece (3 inches) fresh ginger, finely minced
    1/2 cup Asian sesame oil
    1/4 cup corn oil
    3/4 cup chopped fresh cilantro
    Salt and freshly ground black pepper, to taste
    12 loin lamb chops, cut 1 1/2 inches thick

    1. Combine all the ingredients except the lamb chops in a large bowl or other container. Add the lamb chops and turn to coat them well with the marinade.
    2. Refrigerate, covered, for 8 hours or overnight, turning the chops once or twice.
    3. Heat a barbecue grill to high, or preheat the broiler.
    4. Remove the chops from the marinade and carefully scrape the excess marinade off them. Grill the chops over (or under) high heat, 3 inches from the heat source for 4 to 5 minutes per side for medium-rate. Serve immediately.
