4 tablespoons unsalted butter
2 cups fresh or frozen peas (about 2 1/2 pounds in the pod)
1/4 cup fresh mint leaves cut across into thin strips
1/2 head Boston lettuce, cut across into 1/4-inch strips (about 1 1/2 cups)
1/4 teaspoon kosher salt
1/2 teaspoon sugar (optional)
Melt the butter in a small pan over high heat. Add the peas and cook for 2 minutes. Cover, reduce the heat to medium and cook for 3 minutes, or until the peas are tender. Stir in the mint. Cook for 2 minutes longer. Add the lettuce. Cook until the lettuce has wilted. Remove from the heat and add the salt and sugar, if desired.
